Easter Weekend!

This weekend, we went to Salt Lake to stay with our lovely friends, Trent and Eliza. We always have a BLAST with them, and this trip was no exception. We played a lot of Halo, ate at yummmyy Cafe Rio, chatted, and laughed A LOT. We love you guys! \
I think Trent is a little obsessed with this game...

We left SLC to come to Matt's house for Easter din din. Here is Matt playing catch with Murphie!

He likes this...seriously. They have a special bond.

My Mama's King Ranch Chicken Casserole

This is a family favorite for sure! It's super easy to make, and the leftovers are sooo yummy. Cook this-you will love it forever =)

Ingredients:

Corn tortillas (not cooked)
1 can of Cream of Mushroom Soup
1 can of Cream of Chicken Soup
1 can of "Rotel" tomatoes
A LOT of grated CHEDDARcheese (sorry I don't know the exact measurement)
5 cooked chicken breasts (shredded)
1/2 of an onion (I'm not too big of an onion fan, so I only put a 1/2 so if you like more go for it!)

Steps:
Preheat oven to 350 degrees

1. Cook chicken with the onion with any seasoning you like to cook chicken with. I like to cook all the chicken and onion in a cup of water to keep the chicken really moist
2. After chicken is cooled, shred it
3. In a mixing bowl mix the cans of rotel, cream of chicken, and cream of mushroom
4. Grate cheese
5. Tear the corn tortillas into 4th's. I don't know exactly how many to tear, I usually start with 15 and go from there.
6. Now you're ready to make your layers!
7. Spray your 9x13 pan with PAM. This stuff likes to STICK!
8. Start with a layer of corn tortillas covering the entire bottom of pan.
9. Add a layer of the cream of mushroom, cream of chicken, and rotel mixture on top of tortillas. 10. Add a layer of chicken on top of that.
11. Add a layer of cheese on top of all of that!
12. Repeat layer process till it fills the pan.
13. Bake for 25-30 minutes at 350 degrees

Recipe Notes:
*I add A LOT of cheese on the very top to finish off my layers, with a little bit of sour cream, too! *You don't have to worry about frying the tortillas because they soak up a lot of the moisture from the liquids.
*ALSO, be REALLY careful about not adding too much of the mixture of cream of chicken, mushroom, and rotel when you make the layers because it will make it really runny.

Jazz Game!

A couple of weekends ago, we went down to Salt Lake to go to the Jazz vs. Lakers basketball game! We went with Matt's good friend, Matt, and I set him up with one of my good friends, Alyssa. It was a blind date! We all had a blast! The game was on a school night, so we had to drive down and back the same day...we were a bit tired after the game and travelling home. The Jazz got creamed, and Kobe wasn't even playing!






UFC fighter, Matt Hughes, was sitting like 5 rows behind us. I have no idea who he is, but the boys were pretty excited about it.

Valentine's Surprises!

Matt and I had a blast this V-day weekend. We went snowboarding at Kelly Canyon (where we met 2 years ago!). It was the first time I've been in 2 years, so I was a bit rusty. Matt tried to teach me the "right" way to carve, and I ended up falling REALLYYY hard, so we didn't snowboard too much longer after that incident. On Saturday morning we exchanged gifts! I have been sad lately because we couldn't afford plane tickets to Houston for April's spring break. And with both my parents not having jobs, we definitely could not afford the $450 plane tickets. So turns out, Matt has been saving his mula, and he bought me a plane ticket to come home! I AM SO HAPPY! Sadly, he can't come with me because of work, but we will both come in July fo sho. I bought Matt some rad basketball shoes. It's the first pair of bball shoes he has ever worn (so weird!) So now he won't break his ankles. =)

EYELINER

I love you, but I hate you. I have honestly tried about 15 different eyeliners in my life, and NONE of them stay on my eyes! I do not know what the problem is?! I've have worn the really expensive kinds from Chanel, MAC, Urban Decay...to the nonexpensive brands like CoverGirl, Mary Kay, Revlon, and almost every other "smudge proof" kind out there. Does anyone have any suggestions?? Is it because I wear contact lenses?? HELP!

Here's to you Lizzard

Gosh I love this girl. We literally spent almost every day of our grade school lives together. My most downright funniest memories of my life involve this girl. We LIVED at each other's houses-even on school nights! Since I've moved away, we haven't been as close due to the 3,000 mile away separation, but I know we will always love eachother forever!
Memories I cherish with Liz:
-ordering over $50 of Hin's chinese food on a every weekend basis
-riding a four wheeler around the suburb streets of Kingwood
-going to Alex's house, and ALWAYS trying to look our best HA!
-going to the lake
-going to eat at Zio's on my birthday almost every year since middle school
-having sleepovers with Natalie and locking eachother out of the house
-countless hours spent swimming in her pool
-rides in her dad's SWEET Porsche
-choreographing RONCHY dances together!! (B R Right...)
